Bibim-guksu (Spicy Mixed Noodles)
Ingredients:
4 oz buckwheat noodles, you can use any though tbh
3 garlic clove, minced
3 stalks of green onion thinly sliced
4 oz kimchi
1/4 cup gochugaru (use less if you don’t like it spicy)
¼ cup kimchi brine (or cold water)
2 tablespoons gochujang
1 teaspoon sugar
1 tablespoon toasted sesame oil
Splash of rice vinegar (<1tbs)
Cucumber for garnish and crunch
1 tablespoon toasted sesame seeds
1 hard boiled egg
